Love to see the Gunsmith Cats manga adapted to anime. They could get a couple of seasons out of it.
Claymore: A lot left in the manga.
Full Metal Panic: Also has more material in the novels.
Moribito Guardian of the Spirit: Has several more novels.
Slayers: Another one with more novels.
Super Atragon: Had a lot more story to be told.
Vandread: They told a little bit on what happen after the series in a novel but want it animated.
Infinite Stratos an Outlaw Star or Cowboy bebop those could use another season
If it’s not limited to shows this site provides, I would like to see another season of Rosario Vampire, Guin Saga, To-LOVE-Ru, Nyan Koi!, and Princess Tutu. Don’t judge me on my last chosen anime.

Well, that, and not much of a sequel to Welcome to the NHK, but a retelling of it according to either the manga or novel, since both had very interesting stories. (All three of the incarnations are quite different in their own ways, tykes…)
I also agree with HOTD and This Ugly Yet Beautiful World… a few others too, but they aren’t coming to mind at this night, tykes…
Inuyasha: The Final Act is the end of the anime series, since it animated the last 20 volumes of the manga.
