Fruit Salsa with Baked Cinnamon Chips
Salsa:
2 kiwis, peeled and diced
2 Golden Delicious apples, peeled, cored and diced
8 ounces of raspberries
1 (16 ounce) carton of strawberries, diced
2 tablespoons white sugar (more or less to taste)
1 tablespoon brown sugar (more or less to taste)
3 tablespoons fruit preserves, any flavor
Chips:
10 (10 inch) flour tortillas
Butter-flavored cooking spray (or melted butter)
Cinnamon Sugar:
1 cup white sugar
2 tablespoons of cinnamon

In a large bowl, mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.

Preheat oven to 350 degrees.

Coat one side of each flour tortilla with butter flavored cooking spray (or melted butter). Sprinkle tortillas with desired amount of cinnamon sugar. Cut into wedges and arrange in a single layer on a large baking sheet. Spray again with cooking spray (skip if using melted butter).

Bake for 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes.

Serve with chilled fruit mixture.

I would have to say that this song reminded me of this thread and you’ll see why at the 1min 50sec mark. I would totally blast this by the pool though. These guys are turning out to be pretty good and will debut their first album in a few days.
