Pancakes are one food that my late wife was a master of. Just plain, no fruit or special ingredients, Her’s were the best period. None of us guys can equal what she did, so sadly we don’t do pancakes very often.

Yep. None of us guys can get that Fluffy Light texture without using some kind of mix. She tried to teach us but we just never got it.

And her pancakes recipe most likely had to be passed down from generations to get it just right

42 Years ago today, on St. Patrick’s Day 1981, I asked my late Wife (Very much an Irish Lass) to marry me.
She said yes.
I believe I understand Irish luck quite well.

Ummm. How do I put this? I popped the question on a date, yes I did that. However…
I did not know her very well before we started dating. She knew my best buddy from High School & his wife. So, she was interested in me having met a couple of times at the University and my buddy had told her all about me. So, when I asked her out she was very receptive. We hit it off like mad, turned out we had a couple of dozen common friends.
Here’s the kicker, we’d been dating for 5 days when I asked her to marry me.
We lasted for 39 years as a couple until she was called home. I can’t complain.
