Lunar Legend is a good one. Interesting story and feel. I even had the main character kill Redshirt1 in the Mecha turns for no apparent reason, but that was very early on. He did write an apology note.

Red Garden did have a great OP, and it was definitely unique. It was one of the few shows that I watched the OP every time it played.

I can’t believe I’ve let the thread get this far without bringing in MY ALL TIME FAVORITE japanese song. With how much time I spend talking about Yoko Kanno, she gets soundly defeated by this one.
I give to you, the second Casshern end song, my favorite music video of all time, Hikari to Kage. The lyrics and composition here are FREAKING AMAZING. I posted this song on the old forums once, but it certainly belongs here as well.

Coffee, I LOVE the ED theme to SuperGals, as you probably know.
So far, I’m only up to episode 3, but I really like it so far. And i was planning on posting some there once I get a few more episodes down later this weekend.
I’ll second both of those. I bought an Aria soundtrack CD because of those songs.

Clannad’s opening
One of the Inuyasha end themes “Come To Me” I think it was called
The first or second Pani Poni Dash opening (which got used again on a couple of the last episodes)… one of the lyrics the girl singer asks if someone’s been “distracted by my cute butt” …
Princess Resurrection, both the open and end themes
The Cowboy Bebop closing theme - there’s a long version of this used in one episode that I like better than the regular one. But that’s a show that didn’t have any bad music, any criticisms of Yokko Kanno aside. (if you’re saying what? well, they are out there).
And of course the Lupin III theme, who can forget that.
There are others, I suppose if I sat down and made a real list it would be fairly long and cover a long period of shows. I find I like a surprising variety of music types when my exposure to them is as show themes.

Speaking of Clannad, I actually like the After Story OP.
Well, honestly just the begining and ending parts, I could live without the middle part.
Yeah that’s pretty awesome! I did not like the Clannad season 1 OP anywhere as much as the ED, but After Story’s is really touching.
Really need to get Clannad pt2 and After Story pt 1 and 2 asap. I’m way behind you VOD guys now. Still trying to wait til I can get it on DVD so I can watch it on TV, vs watching it on the Online Player on my computer - my desk isn’t comfy. 
OK. now that I’ve figured out *how *to post, Let me post some of my favorite OPs.
Let’s start with an old skool OP-and see the difference between the Japanese and American versions of Tobor the 8th Man:
And, even though it’s been posted, I have to include Clannad. What knocks me out is the shot that runs from 00:40 to 00:47, with the girl running in the field. The “camera” comes from behind her along her right side, then tilts down as it pans right then cranes out to show the entire shadow of the running girl. Now that is a shot that would be virtually impossible to do live, but can be easily achieved in anime.
But one of the most dazzling OPs I’ve ever seen is Last Exile’s:
