Dear Rai,
IT was a busy weekend. Friday night and Saturday were great!, then Sunday was an all day affair up at work. Let’s start with that. Right so I got a fairly early start for work and all, so I stopped got some cheese and tortilla, I was expecting there to be some chicken saddles (that is the thigh and leg) at the restaurant, arriving 30 minutes early to prepare some quesadillas. Turns out I was wrong. There was time for me to run to the store to get some chicken which I promptly started to prepare, but then it was no longer 30 minutes early at work. I had to get to work working, kind of like a bummer. I started to cut the chicken anyway so I could marinate it. I was yelled at several times. “Do your job” they said. Later after I was at the bar, I realized one of the waitresses put an order up on the bar but did not tell me. The Head Chef’s younger brother was asking me (in a mix of English and Korean) if I wanted to go home. I should be working. Naturally he could not understand me when I said there were no orders when I was cutting the chicken, and when the waitresses put it up there no one said anything. The owner came up to me to give me the lecture, naturally I was fuming by then, and I told her my defense. Her only thing was to tell me to make sure all of the regular start up procedures was finished before you start on a personal project, even if it is lunch for the entire crew. I could deal with it, simply because the whole picture was being explained to me.

Work dragged a little, I had my school stuff so when the time came for break (I finished the chicken and I marinated it in salsa verde with garlic powder and seasoned salt), I broke the computer and my notes out and commenced writing journals. A 12 person party showed up right when I was really getting going. I stopped and clocked back in, helped with the sushi, and went right back to homework when the work was done. It was a relief to have my class assignment finished. The day carried on just fine, and I learned how to usea wok well as I had to cook the chicken in it, clean it, then make the quesadillas. I will tell you, making them in a wok in a wok well is fast, but difficult. The sloped sides make an uneven cooking surface, and flipping the thing is almost impossible if you don’t have tings. I made about eight that night. I got good reviews. They were good.

After work I went to my folks house to do some laundry, brought the school stuff and stayed the night. Laundry is done. Now I spent the day looking for a sushi restaurant that will hire a non asian Sushi Chef. Sushi Chefs and jobs are hard to come by, I think, not to mention a job for someone one who is basically white…I try not to identify too much with being white, I get pale when I have not been in the sun for a while, but I darken deeply and quickly. Native American you know. Any way, I managed to get to one place, the chef was not there; I will bug them tomorrow, if I can swing it. I have much going on, I will be turning my car in for tinting in the morning, and it should be done later in the day. After that I think I will then try for the chef, then it may be later in the day, well I have an eye exam at about 3:30? Well 3:00 anyway, and I will be there, new glasses will do wonders for me. I look nerdy in these safety glasses. Next up, work today was rather interesting, it was not really busy, but for a time it felt like it. I must not be all there I got to practice my turning slice a little more that was fun.

What else? Oh okay here is the deal with my current ride, it is a 2008 Mazda 6 iSportVE with 38000 miles, 2.3 liter engine. I was trading my old ride, you know does not run in reverse? Well that one was fetching me 531 bucks on a trade and I have to cut a check of that amount because I need to get a surety bond out on the title until I can get the real one. The jerks did not sign it to me. Well, I am getting that done soon, probably what I will do in the morning after my whole car thing is take care of. The dealer will return my money after I get the title of my older car to them, they can then take possession and I have little to worry about. Okay that is about how thngs are on that.

Funny thing I got to my folks tonight because all my stuff is here and there are some things I would have needed to get from here anyway in order to make it through tomorrow. My stepfather comes out asks why I have been staying so often at the house. I can’t really help it, I have no idea why anyway, I tell him so. I state I am sure I am doing because it is a security net and It comforts me since I am doing a great deal of things. I am not as independent psychologically as I thought. Financially yes for the most part only a couple of cosigns on one thing and that is it. Okay will this be the end of this long essay I am into a page and half on word already. That’s right rai I am pre writing this in word so I don’t have to worry about being booted off by your weird F-ed up log-in system. Well it is time I said good night I think I may got my things together and not stay the night, but I am unsure of that thing I needed before now…hmmm…crap….

I have some stories to tell, I forgot to do my homework for the class today. I might be able to slip it in with the rest of the homework next week. Well, I did get ahead on my homework for next class and I have a small chunk of work for my purchasing class, not much, so I will be pricing some crap out and that is all.

right so I will be editing in the rest as I go, try to keep from logging out you know?

So, as I woke up this morning, I felt like ass, I felt it as I went to sleep but man it was worse when I got up. I’ve got a head cold. Runny nose, headache, lots of pain in the joints. I am in for it for a couple of days. Sorethroat is forming. Well, I am still going to class, I will be buying some surgeon’s masks to wear, and I guess gloves will be used too. On another thought if they try to send me home I will fight it tooth and nail.

On to how my day went

Okay so started off the day feeling like shit. and I felt it all day. No avoiding it. Class was rather slow, we had a pick up of what work we’ve turned in to date, then we took a 30 minute break, went down to the corner store bought some breakfast. That mango Arizona drink was probably not a good idea. We had a demo day learned proper trussing and other skills for our skills class tomorrow. While the chef was working it all, it was kind of funny he had me working a chalkboard taking down highlights in class, kept me busy, so I guess it worked out. I can “behave” when I have something to do.

He also demoed taking apart a chicken, and doing an airline breast. Its basically a chicken breast with a single bone sticking out, the bone is absolutely fleshless, and has no cartilage. I have no idea why it is gaining popularity, but the meat you can use to make a broth after you’ve done a couple dozen of these chickens. Not too bad o an idea if I do say so myself.

There are about I would say 40 people in our class, no way we would all fit around a table to see a demo, so the chef turned on the ceiling mounted camera. I was the operator, again it gave me something to do and I suppose I did a good job on the cameral work, I got a couple of complements. Its weird to manipulate because it uses a remote, I am tempted to tell them to upgrade their remote to a playstation controller simply because the darn thing is easy for me to remember what goes up and what comes down. So that was fun. Most peope think oh you just leave the camera in one spot and just watch. You are wrong, you are constantly zooming the thing out and in and panning it to keep your subject in sight, and when the chef got in the way I would zoom out the image so I could recenter when he moved. It all went rather smoothly; I got a good lunch out of it. Vichy Carrots, Roast Chicken Breast, green beans and pan gravy…

On to after classes, so I took my car in on Tuesday to have the windows tinted, the guys at the tinting place messed up and tinted the rear too lightly, so they had it for an extra day, I was told it should be ready around noon, the enterprise guy kept an eye on it for me, and I kept an eye on him. I did not get the car back until 630 tonight. It is a little disappointing, but I will inspect the car when there is daylight. I am excited. I have tinted windows, my ratio is 35% front 20% back so I can see and all you know. It grants a level of privacy too. I will enjoy driving around with reduced sunlight glare as well. Before you say anything about limousine tinting, I want you to know it is nearly impossible to see at night in a tint that dark. That is why limos only have the dark tint on the back section.

Another reminder, I saw this SUV yesterday that had really dark tiniting in the back, it had one of those spotlights on it, but did not have gov plates or exempt plates, it was a suburban and that tint was like security dark. I was thinking it must have been a private security co car or a texas rangers’ car the SUV was black BTW. So on with that one. My day dragged on and on, I got my production homework done. My head is really hurting if I cannot get to sleep I am popping a pill and drinking a lot of water.

Kay so this covers the majority o the day. I’ve got new glasses btw…they look hot. Good news is nobdy has noticed, which means my glasses were never a defining feature on my face.

Dear Rai,

Not much has happened but I do have a few stories.

It was night and mom and I were talking about the chores for the weekend when I hear a rattling sound from another room followed by “dodo DODO” which was followed by a horrendous barking and snarling. I start howling with laughter while my mother is trying to consol the dog; that things were alright. What had happened was the dog was chasing one of the cats who crawled under a cabinet and managed to active my Roomba. When it starts up it sings a little song before whirring to life. This whirring was what scared the dog; it makes sense as he’s never heard it. I was surprised that it still worked as I’ve left it plugged into an outlet but haven’t used for over a year.

I mentioned a while ago that Dexter and Smores the duck seemed to be enemies. That has now changed, they are BFFs now. I mean this literally, wherever Dexter goes Smores goes. This really happens when Dexter is doing something exciting – like chasing a rooster. Smores immediately runs with Dexter to chase whatever it is that he’s chasing, and if that something becomes too fast, Smores becomes aerial support. Smores follows Dexter so well, that he leaves his two lackeys behind in the pool quacking for his return. The female duck has become broody, which means that she wants nothing to do but sit on her eggs. She’s sitting on maybe 9 eggs, at which I candled 6 and made a positive notation that those were fertilized. So in 3-4 we should have ducklings. Dad is never getting his pool back.
Saturday

I had to work outside a bit in the morning before I ran some errands. I was moving a tarp that was laying in the sun to cover a pile of wood when I felt it snag on something. There was nothing for it to snag on to, so I pulled harder and out rolled the cat Ginger. Turns out she was napping on the tarp. My car has had its ‘check engine’ light on for a week so I went to Auto Zone to get a free test done. Their computer said to replace the spark plugs or replace something called an Oxygen Sensor. I’m pretty happy with my car (mercury cougar 2000) since the only repair I’ve had to do on it was replacing a transmition Range Sensor. It’s pretty funny that the only things breaking are the sensors and not the actual parts. I then had to buy groceries for the next two weeks to cover my lunches. I head home and get some news about the two bull calves, Dante and King. My former show rival and current cattle owner friend came to the house to review the two babies. He loved them. He suggested to turn Dante into a steer for the county fair and to keep King as a bull. Comparing the two, Dante was the number 2. He didn’t have as good leg structure as King and would be the perfect size for the fair. King would be too big for the fair and had the great leg structure to pass on to future offspring. He also went on to say that when King went on the market, that he be the first one called and also asked to take pictures. We agreed; knowing that he is starting the grapevine that two powerhouses are on the way. We agree with the suggestions as we see that King is becoming the dominant of the two and is developing more of a personality.

Seeing as how mom and my sis were away at another cheer thingy, I fed the animals their dinner and was given the displeasure of putting the chickens up. Normally this is very easy, the hens put themselves up. But, due to the fact we are extremely low on hens, my mother agreed to mix hens and roosters and free the other roosters so that we can have baby chicks. My chore now was to keep the loose roosters from joining the selected roosters into the hen pen, adding the loose hens back into their pen, and adding the loose roosters into their pen. I would not have been able to do this task without the herd dog Dexter. He helped me sort and chase in the roosters and chickens into their pens.

After all of Dexter’s hard work, he fell in the pool. He was getting a drink and stepped forward and “ploop”. I was right there so I was able to immediately pull him out. He continued to run around and became very dirty, guess who got poked with giving him a bath.

Dinner ended up being chocolate cake, it was all leftovers from the week and ended up not being enough so I had cake instead.

I took my biochemistry exam online, it took a really long time to complete.
A nice movie came on the tv, Killer Klowns from Outer Space. Even though this film is bad, I still can’t help but liking it. An entire town is actually murdered, the klowns are hideous to look at, not to mention – it can be actually scary at times.

I felt I would take this time to tell you a bit about two topics that are near and dear to my heart. I’d like to first take this opportunity to thank you for all of the love and support you’ve shown me over the past few years as I’ve posted on this board, which in actuality has only been a few weeks. You are like a father to me, and just like a father I know you will pretend not to pay any attention to this message but you will secretly read it, and smile upon your son as you see he is all grown up now.

The first topic I’d like to address is the usage of Information Technology and how it has changed the workforce for both the better and for the worse over the past few decades. Since this is an anime website I will relay it in terms of The Anime Network™. Four decades ago The Anime Network™ website was first budding. There were no forums and the website itself was a boring black letters on white background. The only anime on the website at that time was Gold Lightan and Hurricane Polymar which were both very cool, and I’m glad you put them on the site for us to see. Fortunately Information Technology took a firm grasp of the website like when a teenage male first learns how how to skipping topic and then all of a sudden in the eighties some guy creates windows 95 and poof theres the internet. Then sprint outsourced all of its customer service to India.

The second topic I’d like to address is the proper way to play Halo 3 under the Team Slayer playlist. Similar to many first person shooter games before it, the key to winning a match isn’t in everyone on the team getting the most kills, its getting the least amount of deaths, since deaths translate to points on the other team. It is better to kill slowly and not die, then kill a lot and get slaughtered in the process. Unfortunately many people do not grasp this concept and simply run out in firefights they cannot win. This causes the rest of the team to lose in shame. This is unacceptable. This is why the kill/death theory was developed in order to stave off bad players from playing badly. The first rule of kill death is learn to fall back. That is if you are weak and need health, don’t stand there and die. Run away and fight again later. The second is if you see the opponent shoot the opponent even if another player is shooting the same opponent. Stealing kills is not a crime when you are on the same team. Making that person die so that neither of you die is the key. The key to victory, and victory is important because without victory than you are a loser.

Why does bible black have such an epic soundtrack? Its a friggen hentai, they could have used this music AND its general storyline for something more substantial than a reason to get in the sack with someone. Observe… or rather listen!

Hey everyone, I have been gone for about a week, well I could do these daily again but you know how it goes. Here is the big news, I am sick, I have bronchitis and possibly a cold. When I went to the hospital, the doctor gave me an expectorant and an anti histamine, I think I have not been drinking enough liquid, I managed to blow my nose today and it looked like there was a blood clot in my snot. ITs cool tho the snot was clear otherwise. I am glad.

Well there is this other thing, I missed my last three days of work. I am in terrible mood because of it. Now I must do the russian thing.

the big thing about being all sicky really sucks simply because the school work requires work with food, and of course I am not going to do it like that, I bought some surgeon’s masks, but I am now watching blood the last vampire movie

okay everyone would ask about the mask and ask about swine flu, as if that was the only thing that I could possibly get sick from. I was tempted to just answer yes.

I managed to get some stuff done, I got my taxes done, a 350 dollar return, simply because I made about 3k without taxes, but they took it so I am not too worried, now we were supposed to get a little bit of dough with our checks dipursed forom some pay checks, I am getting that with my regular return. when I went to Jackson Hewett the projected a bill of about 270 dollars, upsetting so I commissioned the preparer to do it privately. it was much cheaper $50…

so yeah…what else, I was watching my folks house and animal over the weekend, and then I managed to also cook abit there. The problem is when mom came home, the kitchen was not spotless. mind you I made a huge mess tobegin with and the only things I had to do after she got home, waswipe down the counters, and put up a pan and clean a cutting board. everything else, aside from my school supplies, was put up. I put those up. then all was left was wiping the counter, pulling out the polish and shining it.

There is something wrong with her sometimes, she was yelling about it, and it took about 10 minutes to straighten, simply because I was suffering a serious headache from her yelling. then she starts rating about the trash, it was full, but it was not overflowing, she complained that it stank, and asks me, can you not smell the trash? and she is yelling, she wasn’t being sensitive to the fact I was sick the whole weekend over, and I was in pain head ache wise, and Of course I could not smell I’ve had bronchitis and everything that goes with it all the way to my sinuses since wednesday.

man that got me hot, I was sarcastic with my answers you know what i mean. straight with my answers, but my tone was blunt.

Today, I had a fasting blood test. Basically at 8pm on monday I was forbidden to eat, then went on get blood at 8 am. during the blood test, I passed out. apparently this was due to a fight or flight response and low blood sugar.

today in class we did lcreole cooking. I made gumbe, I messed it up too much flour in the roux, Ie not enough liquid in the gumbo to make it taste less like fried flour…lesson learned. The jumbalaya was delicous and apparently I have some real skill with roux in general.

so for my project in management by menu I was thinking of an american cuisine, preferably tex mex, restaurant menu in Japan, I am not sure of the market there but anyone who happens to read this and has an opinion can please share it with me. I need to decide on what my cuisine is, why type of restaurant it is (event, modern chic, virtual dining, family friendly) But I am not sure as to what the popular consensus on the japanese mindset is on eating out. after that I build the menu I am thinking a light bodied meal types since that is generally what the palette is trained for in japan, but then again I would not know for sure, would shankajew know more about this? anyway, I was thinking 5 entrees, 3 appetizers, two soups, and I dunno how many desserts possible 3 or 5. it is meant to be very straight forward and the only problem I would have is getting all my ingredients, likely that japan is highly conscious of what goes into the country they don’t want it to be spread and take over native fauna…well those are the concerns debilitating me, I need to be sure to include a concept statment which is a document that I would present before potential investors and lenders as well in order to persuade them it is a good idea. after that, I suppose I should have some kind of interior design description. its difficult.

I am still tasiting the roux from that gumbo, and i ate at 4 pm today…
